SUMMER ON A PLATE IN 7 MINUTES OR LESS

I keep skipping out on dinner. Too tired, too late, too hot, etc. 

But this, I was looking forward to this all day.

Swoon-worthy farmer’s market Beefsteak tomato slices (yep, not even heirloom, just good ol’ fashioned beefsteak), a ball of beautiful creamy burrata, torn basil, salt, pepper & balsamic vinegar. That is all. 

On the side, some bread, which I rubbed with olive oil & garlic and topped it with shredded parmesan before letting it hang out in the broiler for a while.  If it looks a little blacked, that was intentional, I wanted it to be good and charred to stand up to all the juicy tomato/cheese/vinegar goodness. 

I’m pretty happy right now. 

P.S. lest you think you have to spend a lot on fancy ingredients to enjoy such a simple meal, my cheese, bread & vinegar all came from Trader Joe’s and were as reasonably priced as can be.
